Mama Makan is proud to announce Sapore & Spice: Italy Meets Indonesia, an exclusive 6‑hands dinner created in collaboration with three acclaimed chefs: Antonio Cavoto from Mangia Pizza, Pasquale Carfora from Restaurant Aroma Italian Fine Dining and Sebastian Sabau from Mama Makan. The event will take place for one night only on 27 March at Mama Makan, located inside the Hyatt Regency Amsterdam.
Bringing together two vibrant culinary cultures, the dinner will showcase the harmony between Italian craftsmanship and Indonesia’s rich, aromatic flavor traditions. Guests will enjoy a 6‑course menu that reflects each chef’s heritage, technique, and creative vision.
A Collaboration Across Borders
Chef Antonio Cavoto, founder of Mangia Pizza, is known for his innovative contemporary Neapolitan style. After moving from Campania to Amsterdam in 2017, his passion for Indonesian flavors began shaping his signature approach to pizza and creative dough fermentation.
Chef Pasquale Carfora, from the Michelin Guide Restaurant Aroma in Vaassen, is internationally acclaimed for redefining and elevating Italian cuisine in the Netherlands. His achievements include Italian Restaurant of the Year, placement among the Top 50 best Italian Restaurants Worldwide, and his induction into JRE Jeunes Restaurateurs. His dishes express refinement, technical precision, and modern Italian identity.
Chef Sebastian Sabau, leading the kitchen at Mama Makan, brings a deep understanding of Indonesian spices, regional influences, and contemporary plating. His style blends authenticity with modern freshness, celebrating the bold flavors that define Mama Makan’s culinary direction.
Together, the three chefs will present a menu that merges tradition, innovation, and the culinary stories behind both Italy and Indonesia.
